A Quickie…Grain free Muffin ;)
So…you may wonder what inspired this post, or maybe not but I’ll tell you anyways.
I was running out of healthy breakfast foods to eat and I’ve been trying to go 100% paleo. However, I just hadn’t had time to go grocery shopping and restock on food. To be quite honest, I had been lagging on my running and a all my healthy habits… :-/ Whoops!
However, I came across an interesting post on Pinterest for grain free muffins. This peeked my interest, however, the one that caught my eye was titled “Coffee Cup Muffins.” Hmm…could that really be good, I thought. I was somewhat skeptical of this title because in the past when I’ve tried new recipes they don’t turn out as good and definitely don’t look as pretty as the photos.
However, there is no harm in trying. So try I did, glad I did because the end result was absolutely fulfilling.
You can mix up the recipe however you like. When I make mine, I’m constantly changing it. However, the basics of what you’ll need are:
coffee mug of your choice :-)
coconut oil (or olive oil as a substitute)
flaxseed mill (you can also use almond flour, cashew flour, or coconut flour, however, remember that coconut flour absorbs moisture quickly so don’t use too much of it, or your muffin will be really dry.)
a dash of salt
cinnamon / ginger/ spice to taste (optional)
honey (1 table spoon)
1st off, I place a little bit of olive oil in the mug I’m going to use. This way after I finish cooking the muffin in the microwave, it won’t get stuck to the inside of the mug.
2nd, I mix all of my dry ingredients together. I’ll put 2 table spoons of flaxseed mill or almond flower, then 1/2 a table spoon of coconut flour. (coconut flour has a naturally sweet taste to it, so I always add 1/2 a table spoon of this flour, regardless of what my first 2 table spoons of flour were. I like to experiment with different flavors so I add a dash of salt (very little) then pumpkin spice seasoning or ground ginger.
3rd, I’ll start adding my wet ingredients. Honey is always fabulous to add to this recipe. I’ve added my grandmothers plum jelly, which she makes from scratch. Then I’ll add my 1 egg. If there are nuts or raisins you’d like to add, you can do that as well.
Once all your ingredients are added to your mug, mix well until you have a smooth even texture. It should have a little thickness to it. Once this has been done, then place your mug in the microwave for 1.5 minutes.
Once you take out your mug from the microwave, let it to sit for a minute, however I like to take mine out and place in the toaster oven for 10 minutes, just so that the edges of my muffin can crisp. (Like the picture below).
When your all done you get something that is tasty and took no more than 20 minutes tops to make, (which includes the time it took to take take out all your ingredients).

A Good Morning
For my daddy’s birthday I got him a gift card to Starbucks but I also got him a coffee mug. Not just any coffee mug, but a Batman coffee mug. Batman is one of his favorite superheroes that he grew up with. Anyways I had some nice paper I got from a store when I purchased a hat back in August, which I thought would be perfect to wrap my daddy’s present. In efforts of trying to resourceful, I didn’t use any tape and grabbed a lace that had looped itself out of my sweatshirt as a tie/bow. & voi la! A cute, creative wrapped gift!
Sorry ya’ll been on vacation, much needed :-) I will admit my diet was not exactly perfect this trip but I did hit the gym every morning. A nice #warm #stew / #soup I made last night for #foodprep! 🍵 Smelled and tasted good 👍 #Sautéed some #kale #onions #sweetpotatoes and #turkeychorizo then got a pot hot with some #oliveoil #seasalt #rosemary #drypepper #chilipowder to add some #spice🔥 . I #chopped up some more onion and more sweet potato to boil and cook some more. I then added some #greenbeans to complete the dish. I let it sit overnight to have the #flavors #marinate a little longer and it was well worth it! #nonom #delicious #lunchtime!
I apologize for not writing an actual review since my initial coffee challenge post.
I have tried several different coffees since my initial post in November, so I thought that i would begin with the coffee shop that is closest to where I live.
At Canyon Hills Church, there is small but new and quaint coffee shop. It somewhat reminds me of the coffee shop I had on campus in college. (yay VUSC aka: Vanguard University of Southern California). Anyways…I work during the day so I have only experienced this coffee shop in the early morning, late evening or weekends. I will say that there is always a place to sit, so long as it is not a church night. At this coffee shop, they don’t have a large variety of drip coffees, however, the type of coffee they brew is Peet’s Coffee.
I know that Peet’s Coffee has several different brews of coffee, however, on my particular visit I was able to taste their Sumatra drip coffee.
From what I’ve tasted with the various drip coffee’s from Peet’s is that their coffees tend to be stronger than other chain coffee shops/stores. I’ve had this coffee several times and what I can say is that if you like your coffee really strong, then you have come to the right place. Sumatra is one of Peet’s Dutch inspired roasted coffees. Just like wine, their coffee beans are aged to capture all of the flavors.
I usually drink my coffees with NO added sugars or sweeteners and if possible with no milk or creamer. Upon tasting Sumatra, completely untouched of any added sugars, it was STRONG! Maybe my taste buds are a bit wimpy but I had to add some Raw Cane sugar. This is most natural form of sugar you can get besides honey. I only added one packet so that I could actually drink my coffee.
However, in all honesty, it was still bitter, so I added a little bit of my unsweetened almond milk. With these two additions, i was still able to capture the flavor of the coffee. This coffee had a smoky taste to it, but it wasn’t bad it just added an extra flavor to the caffeine. The caffeine gave me a lot of energy, which lasted for quiet a while. However, again, maybe I’m just baby when it comes to Peet’s Coffee, but I was not be able to have more than one cup of this Peet’s coffee as it had such a rich flavor. It would have been overkill to enjoy too much of it.
Now I know that in my November Post I noted that I love the taste of coffee itself and that I don’t like to add too much sugar to my coffee so I don’t diminish the flavors naturally held in the coffee bean, however, it has never failed that I have had to add just a little something extra to my coffee whenever I drink Peet’s coffee. So for those of you who love that strong smokey somewhat bitter taste of coffee, you can’t go wrong with Peet’s.
I hope that you enjoyed this review and that it was somewhat helpful for you in determining if Peet’s coffee is right for you. However, your taste buds could be entirely different than mine, so I will always encourage you to try it for yourself.
