Morning everyone!!! Sorry I know I eve been #mia, I’ve just been super busy. But Busy is good! Had a sweet craving last night after a #quickworkout. I wld consider this #paleo #indulgence 🌰🍨 I’ve copy the #workout below. So #simple and you can do it in the #comfortofhome if you like. #geterdone!!💪 Start off with 10 push-ups, go immediately into 30 crunches as fast as you can, stand up and do 30 seconds of squat jumps, use a chair and do 10 reverse push-up/dips, down to the ground and do 30 seconds of bicycles, stand up and do 30 seconds of lunge jumps. Take 3 minutes rest between and repeat. Do it 4 times. Credit for workout shld be given to my good friend #RyanLucker. :)

A Quickie…Grain free Muffin ;)
So…you may wonder what inspired this post, or maybe not but I’ll tell you anyways.
I was running out of healthy breakfast foods to eat and I’ve been trying to go 100% paleo. However, I just hadn’t had time to go grocery shopping and restock on food. To be quite honest, I had been lagging on my running and a all my healthy habits… :-/ Whoops!
However, I came across an interesting post on Pinterest for grain free muffins. This peeked my interest, however, the one that caught my eye was titled “Coffee Cup Muffins.” Hmm…could that really be good, I thought. I was somewhat skeptical of this title because in the past when I’ve tried new recipes they don’t turn out as good and definitely don’t look as pretty as the photos.
However, there is no harm in trying. So try I did, glad I did because the end result was absolutely fulfilling.
You can mix up the recipe however you like. When I make mine, I’m constantly changing it. However, the basics of what you’ll need are:
coffee mug of your choice :-)
coconut oil (or olive oil as a substitute)
flaxseed mill (you can also use almond flour, cashew flour, or coconut flour, however, remember that coconut flour absorbs moisture quickly so don’t use too much of it, or your muffin will be really dry.)
a dash of salt
cinnamon / ginger/ spice to taste (optional)
honey (1 table spoon)
1st off, I place a little bit of olive oil in the mug I’m going to use. This way after I finish cooking the muffin in the microwave, it won’t get stuck to the inside of the mug.
2nd, I mix all of my dry ingredients together. I’ll put 2 table spoons of flaxseed mill or almond flower, then 1/2 a table spoon of coconut flour. (coconut flour has a naturally sweet taste to it, so I always add 1/2 a table spoon of this flour, regardless of what my first 2 table spoons of flour were. I like to experiment with different flavors so I add a dash of salt (very little) then pumpkin spice seasoning or ground ginger.
3rd, I’ll start adding my wet ingredients. Honey is always fabulous to add to this recipe. I’ve added my grandmothers plum jelly, which she makes from scratch. Then I’ll add my 1 egg. If there are nuts or raisins you’d like to add, you can do that as well.
Once all your ingredients are added to your mug, mix well until you have a smooth even texture. It should have a little thickness to it. Once this has been done, then place your mug in the microwave for 1.5 minutes.
Once you take out your mug from the microwave, let it to sit for a minute, however I like to take mine out and place in the toaster oven for 10 minutes, just so that the edges of my muffin can crisp. (Like the picture below).
When your all done you get something that is tasty and took no more than 20 minutes tops to make, (which includes the time it took to take take out all your ingredients).
